Manual harvest of the vineyards and pressing of the whole grapes to maintain their properties to the maximum. We ferment the musts at low temperatures to preserve the freshest aromas in the wine. To choose the Leopardi blend, we taste all the wines of the vintage to choose the best in terms of profile and aging potential. At the beginning of the year we bottle the selected blend and prepare the bottles to begin the second fermentation and aging in rhyme, at constant temperature and humidity, in the cellars. After more than 66 months of rest, we place the Leopardi bottles on the desks, where we proceed to manually stir each one of them. After about a month of stirring, we disgorge to remove the lees from the wine, and seal with the final cork.<\/p>\n
